Fairmont Pacific Rim is aiming to be a summer dining hub with two new spots opening up to join the renowned Botanist and Lobby Lounge & RawBar. Take it outside at the pop-up patio, in collaboration with Oakridge and Westbank, or dine-in at the new giovane bacaro from Kitchen Table Restaurants.

The hotel plaza has been transformed to a unique outdoor experience, reflecting the design for the upcoming 10-acre park at Oakridge Park, inspired in equal parts by the rice terraces of Southeast Asia and the coastal temperate rainforests of British Columbia. The grassy patio features more than 50 seats, nestled around carved ‘hills’, accented by individual fire pits, lounge areas, and umbrella topped tables.
Fairmont Pacific Rim’s Executive Chef Damon Campbell’s new food truck stands centre stage, serving a playful menu of appetizers to mains with ever-changing desserts, alongside, award-winning Creative Beverage Director Grant Sceney’s line-up of handcrafted cocktails.
The patio will also feature several of the Fleurs de Villes ROSÉ installations taking over the city as of June 11, with three ‘flower bombs’ enhancing the food truck and the hotel entrance.
“We are excited to welcome guests back to the front plaza for our second summer pop-up patio,” said Regional Vice President and Fairmont Pacific Rim General Manager, Jens Moesker. “Hotel guests and locals alike can experience the patio and enjoy some of Chef Damon Campbell’s fare with cocktails and live music among other summer programming.”
Inside, on the hotel’s lobby level giovane bacaro brings Venice to Vancouver when its doors open on Thursday June 10th. General Manager Mark Taylor (Cibo Trattoria, Siena) and his team will take guests on a culinary tour in the style of Northern Italy’s ‘bacaros’. Chef Scott Korzack‘s (Ask For Luigi, Autostrada, L’Abattoir) will follow the seasons tying into relationships with local farms and producers to create a food menu, infused with Italian sensibilities, traditions, and techniques, encouraging patrons to explore and embrace a choose-your-own-adventure dining experience via Venice’s signature cicchetti (small plates). Of course the Italian theme carries through to Bar Director Tyson Davies beverage menu of cocktails, spritzes and spirits from the region, and Wine Director Cassandra Mosher follows suit showcasing wine from small, family run wineries in Northern Italy and here in BC.

Starting June 10th, giovane bacaro will open seven days a week from 11:30 am to late for dine-in restaurant and bar service. Reservations can now be made online by visiting the website at giovanebacaro.com.
The Oakridge x Fairmont Pacific Rim pop-up patio is open seven days a week from 12:00 p.m. to 8:00 p.m. with live music on Sundays through Wednesdays from 12:00 p.m. to 4:00 p.m. and on Thursdays through Saturdays from 12:30 p.m. to 8:00 p.m. Seating is first come first served, and take out can be ordered via Ritual.
